This white chicken chili recipe is a fall and winter staple in my house. We love to make it for dinner Sunday and have leftovers for lunch throughout the week. Add or remove vegetables to suit your taste.
When making this recipe use organic ingredients when possible. Be sure to read the label when buying packaged ingredients to ensure the list is free from artificial ingredients. If it’s not something you would buy and cook with, it shouldn’t be included on the ingredients list.
CROCKPOT WHITE BEAN CHICKEN CHILI

Ingredients
1 rotisserie chicken
2 15 oz cans white beans
2 15 oz cans corn
1 small can green chilis
1 bunch celery
1 sweet onion
1 jalapeno
32 oz organic low sodium chicken broth
2 tablespoons cumin
1 tablespoon minced garlic
Salt & pepper to taste
Directions
- Shred rotisserie chicken.
- Dice all vegetables.
- Layer each ingredient in the crockpot, stirring each time something is added to distribute evenly. Start with the chicken, add canned ingredients, then seasoning, next fresh vegetables, and lastly add the broth.
- Set crockpot to low and cook for 6-8 hours, stirring every hour or two.
Additional Notes
Additional toppings can include sour cream, radishes, sliced jalapenos or diced avocado. Frozen corn can be used in place of canned.
